Classic gazpacho with tomatoes, peppers & cucumber

gazpacho-with-basil-cover-image Is the basil in your garden slowly stealing the sun? Then give it some scissors and turn it into a delicious gazpacho. Your palate will thank you!

You need these ingredients (2 people):

    • 600g tomatoes
    • 2 peppers
    • 1/2 cucumber
    • ½ onion
    • 10g fresh basil
    • 2 slices of toast
    • 1 clove of garlic
    • 2 tsp light balsamic vinegar
    • 2 tbsp olive oil
    • Salt
    • pepper
A delicious French basil Don't have basil? This way, please :)

Preparation (~30 minutes)

  1. Soak toast bread in a little water.
  2. Wash the tomatoes , peppers , and cucumber and cut into large cubes. Set aside some vegetables for decoration.
  3. Peel and dice the onion and garlic.
  4. Purée the vegetables and toast with a hand blender or in a food processor until the soup reaches a creamy consistency. If it's too thick, simply add a little water.
  5. Then add oil, season with a dash of balsamic vinegar, salt, and pepper. Let it chill in the refrigerator.
  6. Dice the remaining vegetables.
  7. Wash the basil, shake it dry and pick off the leaves.
  8. Before serving, sprinkle basil over the soup, add finely diced vegetables and serve.
